The event was funded in part by the Government of Canada’s New Horizons for Seniors Program and aimed to encourage seniors to enhance both their social connections and overall health through nutrition-focused cooking activities. In an era of rapid technological development, mental health challenges among seniors have become increasingly significant. To address this, the Association of Certified Professional Nutritionists (ACPN) hosted a special lecture themed “Cooking to Combat Loneliness: Rainbow Chickpea Sandwiches and Senior Dietary Strategies.” The session, moderated by Mr. Ruizhu Xu, featured keynote speaker Julia Wong, ACPN Registered Nutritionist and lecturer at the Canadian College of Public Health, who delivered a highly engaging and practical health presentation.

Facing Senior Loneliness: An Overlooked Health Risk

Julia Wong provided an in-depth analysis of the challenges seniors face as they age, including cognitive decline, shifting social roles, and emotional isolation. She highlighted research showing that social isolation can lead to serious health issues such as high blood pressure, cardiovascular disease, weakened immunity, anxiety, depression, and even cognitive decline and dementia. “Loneliness is not just an emotion—it’s a health threat,” Wong emphasized, noting that it can result in unhealthy habits such as inactivity, smoking, or excessive drinking, creating a negative cycle. Prolonged emotional stress can also trigger chronic inflammation, further impairing immune function.

Nutrition Intervention & Hands-On Cooking

To address these concerns, Wong introduced the “Rainbow Seven Colors Diet,” encouraging participants to include complete proteins, healthy fats, complex carbohydrates, and a spectrum of vitamins and minerals to support physical and mental well-being. She presented ACPN’s Personalized Nutrition & Health Management Plan, which integrates symptom analysis, lifestyle assessments, dietary evaluations, and precise health testing. In the interactive session, participants prepared colorful rainbow chickpea sandwiches under Wong’s guidance, combining tomatoes, carrots, corn, spinach, and purple cabbage—each contributing unique phytonutrients such as lycopene, beta-carotene, lutein, iron, folate, and anthocyanins. The activity not only deepened participants’ understanding of nutrition but also created a lively social atmosphere.
