The keynote session was delivered by ACPN Senior Registered Nutritionist and Canadian College of Public Health lecturer Ms. Julia Wong. She introduced participants to a four-step personalized nutrition management framework—symptom analysis, lifestyle review, dietary optimization, and science-based health testing—empowering seniors to take a proactive, data-driven approach to healthy aging. Ms. Wong also explored eight key mechanisms of aging, including oxidative stress, telomere shortening, and chronic low-grade inflammation, and shared practical strategies to delay age-related decline. Participants learned how antioxidants from natural foods can help protect cells, reduce inflammation, and lower the risk of chronic conditions such as cataracts, cardiovascular disease, and cancer.

The interactive highlight of the day was the hands-on preparation of a colorful Rainbow Salad. Guided by Ms. Wong, participants explored the nutritional power of each color group: lycopene-rich reds for heart health, beta-carotene-rich oranges for vision, lutein-packed yellows for eye protection, leafy greens for bone support, and anthocyanin-rich purples for brain health. The session concluded with participants enjoying their creations together, sparking conversation and camaraderie. The workshop not only provided evidence-based nutrition education but also embodied ACPN’s mission to combine professional expertise with meaningful social connection, supporting seniors in living healthier, more vibrant lives.
